Brussel salad with manchego, pistachio, and pomegranate

This is my go to winter salad, perfect for potlucks because it holds up well for a few hours. Enjoy!

Serves 4

  • 4 cups shaved brussel sprouts (about 10 oz whole brussels)
  • 4 tbs olive oil
  • 2 tbs apple cider vinegar
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • “Shit tons” of black pepper
  • Salt to taste
  • 1/3 cup shaved manchego
  • 1/2 cup pistachios
  • 1/2 cup pomegranate seeds
  1. Whisk together oil, AC vinegar, mustard, lemon zest, salt, and pepper and taste for seasoning. It should taste salty on its own. 
  2. In a large bowl, combine the shredded Brussels, cheese, pomegranate seeds, and pistachios and mix in the dressing, tasting as you go to ensure the right ratio of salad to dressing.
